Instructions
Preheat the oven to 190ºc/170ºfan and grab a mini tart tin
Cut the filo pastry into strips, and then into small squares - about 2" in size.
Layer 2-3 pieces of filo by brushing a little melted butter between each layer and sticking together
I shift each layer of pastry so it creates a star when stuck together
Press each one into a mini tart tin whole and press down
Repeat until all the pastry is used and you have 24 mini tarts.
Add a smidge of wholegrain mustard to the bottom of each mini bite, and then add a little cranberry sauce to each one as well
Split the cubes of bacon and brie between the 24 bites
Bake in the oven for 10-12 minutes, or until golden.

Notes
I use this mini tart tin
to make these brie & bacon bites
These are best served fresh, but can be reheated in the oven if needed by preheating an oven to 180ºc and baking for 5-10 minutes.
These can be prepped in advance and kept in the fridge until they are baked later on in the day or they can freeze once baked for 3+ months.
